In case the fact that it’s Friday isn’t enough to make you happy this morning, here’s a cute picture of my dog, dressed up as a Christmas tree, in front of the Christmas tree.
I’m looking forward to another weekend full of fun christmasy and thanksgivingy (yep, mom got a 21 pound turkey to roast for dinner on Sunday since we were out of town for real thanksgiving) activities this weekend! On Saturday we are hosting our second annual Christmas brunch! Basically a time to get together and eat these cinnamon rolls, 4 different kinds of dips, wear tacky Christmas clothes, and drink too many mimosas. I love it. AND there’s snow in the forecast.
In the interest of starting the weekend off on a healthy note, here’s a recipe for some delicious, creamy oats that taste like legitimate dessert. I mean, so good. Creamy, blueberry, nutty, filling and satisfying. These have become a go-to for me very quickly and if you’re an oat lover, I’m sure you will love them too!
- ½ mashed banana
- ½ cup oats
- ¾ cup vanilla unsweetened almond milk
- ¼ cup 4% (whole milk) siggi's plain yogurt
- 1 tsp chia seeds
- 1 tsp vanilla extract
- ¼ cup dried blueberries (i buy mine at trader joes)
- sprinkle of cinnamon
- Start by mashing ½ of a ripe banana into a jar, or bowl with a lid. Add all the other ingredients, shake well, and place in the refrigerator overnight, or for at least 2 hours. Enjoy!
