Sometimes the most delicious dinners come together so unexpectedly. Last week, I decided I was in the mood for a quick bowl of pasta. I searched through my kitchen and came across some whole wheat noodles and half a jar of questionable (as in hmmm, I don’t remember ever buying this, but how old can it be? I don’t SEE any mold…) pasta sauce. An internal battle ensued between the lazy, pajama-wearing, Netflix-watching person inside of me and my stomach, which wanted a delicious pasta dish. As always, my taste buds prevailed. I soon found myself wandering around Whole Foods, sampling a variety of cheese, two-bite cinnamon buns (which were delicious, by the way), tortilla chips, granola, and pretty much everything else I could get my hands on, because calories don’t count when you’re just sampling ! (I advise against visiting Whole Foods while hungry.) After I got back on track, I headed over to the produce section and a magnificently perfect head of cauliflower caught my eye. I decided to change things up. Though I’m a little late to the cauliflower sauce game, I still wanted to see what all the fuss was about. I put one of those babies in my basket, along with some broccoli, mushrooms, and a chicken breast to put together a cauliflower alfredo pasta. And just like that, my “quick bowl” of pasta had turned into a pretty fancy affair — a feast for one. I turned on some Breaking Bad (yep, I’m still catching up on that), poured some wine, and chowed down. It turned out great and since it was loaded with so many veggies, I didn’t even have to feel guilty about eating way more than my fill! This would also be filling without the chicken if you’re looking for a meatless meal!
