Happy New Year! I spent the past weekend celebrating 2017 in Nashville with Joseph and some friends. We rang in the new year with John Prine, Jason Isbell, and Kasey Musgraves at the Grand Ole Opry which was a once in a lifetime, check off the bucket list, awesome way to end 2016. In all honesty, I was worried about staying at a concert until 1am..I’m not a night owl and am always the first one to fall asleep (ie. photo of me asleep at the table at 11:47 pm last new year’s eve..) I did get a little tired about halfway through the night, but there was so much energy and so many drunk older people having so much fun singing along to John Prine, I felt wide awake and found myself hoping I’m still having that much fun at concerts at age 60+ someday. Today I am sharing one of my most commonly prepared, easy breakfasts. I can’t believe I haven’t dedicated a post to this one yet! This overnight oatmeal has only THREE ingredients and tastes so good I eat it for dessert sometimes! Have you heard of Fairlife Farms milk? I owe the thick, chocolatey, creamy deliciousness of this oatmeal to Fairlife Farms. Their ultra filtering process leaves milk (not just chocolate milk!) with half the sugars and twice the protein compared to other brands. It’s my favorite chocolate milk I’ve ever tried, for its creamy richness.
To make these oats, you only need to add Fairlife Farms chocolate milk, (or any other kind of chocolate milk, but I highly recommend the Fairlife) chia seeds, and oats. I make mine in a jar for the ease of shaking it to mix, placing it in the fridge, and throwing it in my bag to bring with me to work the next day. Unless I don’t have work, then I put it in a big pretty mug, because eating out of fancy dishes is always more fun 🙂

- ½ cup old fashioned or rolled oats
- 1 teaspoon chia seeds
- ¾ cup Fairlife Farms chocolate milk
- Mix ingredients together and refrigerate for at least 2 hours
