A healthier breakfast sandwich you can prepare in less than 5 minutes!
Looking for a way to get that McDonald’s breakfast fix in but not break you healthy eating strike in 2017?? Look no further my friends- I bring you, the healthified McGriddle! Part of a fast-food with a healthy twist series at the Podwika house-hold. Some past favorites of this series have included the famous “Chipotle” burrito bowl and Taco Bell’s crunch wrap supreme (shout out Al and Andie.)
The inspiration for these came when we purchased Thomas’ double protein oatmeal with cinnamon English muffins during our usual Sunday morning shopping trip. I was sold when I saw the double protein advertisement on the package because I like my breakfast to be nice and filling! They toasted up to be subtly sweet and paired well with the saltiness of Applegate’s maple chicken sausage patties. Did you know you can microwave eggs? I used a 4 inch ramekin to scramble and then microwave an egg for one minute. You can use any small microwaveable dish. It’s the perfect method for a breakfast sandwich because the egg stays together. Layer these three together for a salty-sweet breakfast treat you can feel good about eating!
- 1 Oatmeal with cinnamon english muffin
- 1 maple chicken sausage patty (I use Applegate)
- 1 egg
- Toast english muffin.
- Cook sausage patty in a saucepan over medium heat until heated through.
- Scramble egg in small microwaveable dish and microwave for 1 minute. Salt to taste.
- Assemble egg and sausage on english muffin and enjoy!
