Mmmm this my favorite easy, healthy side dish to make on a weeknight with dinner. Lemony, salty brussel sprouts sprinkled with parmesan and roasted to perfection. The best part is- it takes 5 min to prep and 10 min of non-involvement to cook.
But first, a story from dinner last night. A couple of our big guys were in town for exec meetings at our Chicago office this week, so my co-worker, boss, and I took them to dinner at Osteria Via Stato in River North last night. I ordered the pan seared scallops with pea paste, oyster mushrooms, and pea shoots for my main course, but couldn’t take a picture because it was a business dinner. I definitely want to go back there to try their seasonal risotto, which was spinach, mushroom, and fontina cheese-Deciding between the scallops and the risotto was such an internal battle for me; it was like Sophie’s Choice! Oy. I had to keep my composure though and order fairly quickly, since I was with work people. I eventually settled on the scallops by telling myself I could go BACK to the restaurant and order the risotto another time. Anyone wanna get some risotto soon?? 🙂 Anyway, by the time dessert came around, I was stuffed and decided I didn’t need to get anything. That is, until the waiter came by and listed off the gelatos of the day. As soon as the waiter left the table, everyone started talking about what kind of gelato to get and someone said they wished they could remember the gelatos the waiter just listed off so quickly. Without hesitation, I responded “Vanilla bean, chocolate hazelnut, peanut butter cup chocolate chip, burnt caramel, and cinnamon.” in perfect order. Everyone had a good laugh at this and our CFO commented that I must really love food. Well, he hit the nail right on the head. And then I went from “I’m too full for dessert” to “I should order 3 scoops of gelato” in about 3 seconds—I landed on peanut butter chocolate chip – my favorite, followed by burnt caramel, and then chocolate hazelnut. A perfect end to a delicious dinner!
I had to balance out all that over-eating with a nice big heap of brussel sprouts included on my dinner plate the next night!
These are so delicious, in a different way than gelato, but still very satisfying. I make these all the time, sometimes with potatoes and broccoli, too.
